Lumbersnack: Pizza lover

As a pizza lover and busy student, I frequently need a pick-me-up, but I don’t like the pizza the school offers us; it always looks like it’s been sitting out far too long for comfort. After looking up ways to make easy on-the-go pizza snacks, I stumbled upon rice cake pizza. 

I enjoy eating rice cakes, and the different flavors allow me to make different types of snacks, but making a pizza as a snack had never occurred to me until I laid my hands on the beautiful creation of Tomato and Basil rice cakes.

Ingredients: 

2 Rice cakes — I recommend the Lightly Salted or Tomato and Basil 

2 tablespoons marinara sauce 

1/4 cup shredded cheese — I use mozzarella, but feel free to use your favorite 

6-8 pepperoni slices (optional) 

Step #1: 

Preheat your oven or air fryer to 375 and place 2 rice cakes on a baking sheet. 

Step #2: 

On one side of the rice cakes, cover each with a layer of marinara sauce. 

Step #3: 

Distribute the 1/4 cup of shredded cheese between both rice cakes over the sauce. 

Step #4: 

Place toppings over the cheese — this is optional. I like adding pepperoni, or you can add slices of ham and pineapple for Hawaiian rice cake pizza too. This recipe allows you to really make it your own, so add your favorite toppings! 

Step #5:

Cook rice cakes in an air fryer or oven for 5-7 minutes. 

Step #6:

Enjoy!
